Another one my creations. These are so easy and good for you. I often eat these for Breakfast. Yes, cookies for Breakfast, it’s not a typo :o) I am not a coffee drinker, but I enjoy my morning Raspberry tea with these cookies. As I mentioned, they are very easy. The only “laboring” part is chopping the chocolate. Keep the chocolate in the fridge, it is easier to chop. I want to stress, you have to chop the chocolate in very fine pieces. The chocolate is 100% sugar free, large pieces would taste very tart. Smaller pieces beautifully melt in the dough.
